The postgraduate Be Sustainable in Gastronomy is an interesting specialisation if you want to learn more about high-quality gastronomy. During this English-speaking course, you will prioritise sustainability: both in your product choices and their surrounding ecosystems. Besides this, you will also learn how to create your own culinary personality as you gain extra work experience during your internship with one of our partners. With your expertise, you will soon be able to take on the biggest sustainability challenges in your own company. Or, alternatively you will be able to work as a consultant for sustainable gastronomic projects.

In this postgraduate course, you get master classes from top professionals in the sector and you take part in internships in the most prominent restaurants in gastronomy and sustainability. Sustainability can no longer be dismissed in our society. It is crucial in nearly all sectors. This topic is undoubtedly really important within gastronomy as it influences many aspects of our society. Examples include; the developments in agriculture, biodiversity, climate change and food safety. Thanks to your expertise, you will take on a leadership role within sustainable gastronomy. Find inspiration in inspiration labs, develop your business ecosystem and apply your knowledge to your culinary personality. 

BROAD NETWORK 

You will broaden your network thanks to relations with fellow students, many top professionals from the master classes and, of course, your connections through your internship. In this sector, your network is invaluable. 

UNIQUE IN BELGIUM 

This postgraduate qualification has its own unique content and methodology. This postgraduate course is a unique collaboration between AP University of Applied Sciences and Arts Antwerp and partners from the sector for gastronomy and hospitality students worldwide. After this course, you can immediately get started on your own project or as a consultant in gastronomy. 

The postgraduate course lasts at least one year and consists of 60 credits. This programme utilises  twelve different modules. You will be either at the campus, in the workplace or on an internship in a restaurant. 

  • In the first semester, you will be on campus from September 18 until October 20. Then you will follow a 12-week internship. 
  • In the second semester, you will be on campus from February 5 until March 15 then you will follow another 12-week internship. 

During the master classes on campus or in the workplace, various topics are covered, such as The Botanical Research programme about plant-based gastronomy, sustainability in the kitchen, patisserie and chocolate, product development, worldwide changes in gastronomy, reputation management and content marketing, corporate social responsibility in gastronomy, etc. You will, therefore, be not only inspired during our workshops but you will also really get to work on your own personal branding and culinary signature. Together with us, you will create a strategic plan to develop your culinary identity. In doing so, you will get a good insight into sustainable entrepreneurship. 

Every semester, you also follow an internship of at least 50 work days with one of our course partners. During the internship, you will be a fully-fledged member of the restaurant’s team as they help you expand your portfolio and develop your culinary personality. 

Straight to work

After this course, you can get straight to work on your own project or as a consultant in gastronomy. The knowledge and inspiration you gain from this course will give you a jump-start towards an interesting and challenging career in sustainable high-quality gastronomy.

Admission requirements

This specialisation programme is aimed at students who have already obtained a higher education qualification of minimum Bachelor level. Given the specificity and depth of the programme, having obtained a qualification in Culinary Arts or Hospitality is an added value in successfully completing the programme. If you want to take your culinary talent to the next level, then some experience in the world of gastronomy is definitely a plus.

Besides this, you will also need to present a portfolio. This should also include your CV and letter of motivation. Your portfolio will be taken into consideration and an invitation for an online meeting will follow. After this interview, you will know if you are the right candidate for this course and your studies can start.

This course costs 3,500 euros for EU  students and 6,200 euros for non-EU students.
